Kalita Wave

The Kalita Wave is near the top of any coffee lover’s list of ways to brew coffee at home. This pour-over method gives you a tremendous amount of control over your cup, while producing incredibly clean coffee.

WHAT YOU'LL NEED

• Kalita Wave coffee maker

• Kalita Wave coffee filters

• Grinder

• 20 grams of coffee, roughly four tablespoons

• Hot water - about 205°F

• Kitchen or coffee scale

• Timer

STEP 1: PREP AND PREHEAT

We’ll be making two cups of coffee with about 20 grams of coffee beans. When you’re making coffee using a Kalita Wave, try to keep a 1:16 coffee to water ratio for a nice, balanced cup.

First, grind your coffee until it’s coarse, a little bit finer than the consistency of sea salt. 

Next, place your filter in the Kalita Wave and wet the filter. Pour out the remaining water from the decanter before getting started with your brew.

THE FIRST POUR

The first pour is the heralded bloom. Here, we want to pour slowly, wetting the grounds and allowing the coffee to release carbon dioxide. A handy bloom rule here is to double it. Meaning, the amount of water you pour to bloom your coffee will always be double the weight of the coffee itself. 

Start your timer and pour 40 grams of water slowly over the grounds, spiraling out from the center of the Wave towards its edges. 

Wait 30 seconds after pouring. 

THE SECOND POUR

Slowly pour an additional 80 grams of water over the grounds in a spiral motion until your scale reads 120 grams. 

Wait 45 seconds. 

THE THIRD POUR

Here we’ll pour another 80 grams of water in the same spiraling motion. Your scale should read 200 grams. 

Wait 45 seconds.

THE FOURTH AND FINAL POUR

For our final pour, we’ll pour 120 grams of water until our scale reads 320 grams and our timer sits at 3 minutes and 30 seconds.

Give the Kalita Wave some time to catch up. Let it rest for a minute as our final pour passes through the beans. Then, serve and enjoy!
